Cheezy Sauce

2 C Cashews

1 ½ C Water 

5 T Raw Unhulled Sesame Seeds (Optional: 1 T Toasted Unhulled Sesame Seeds, to add smoky flavor)

2 T Lemon Juice

2 t Onion Powder

1 t Garlic Powder

1 t Salt

2 t Paprika

 

 

Mix all together until smooth in a powerful blender (Vita-Mix).  You may need to add a tiny bit of water at the end if it is too thick to blend smoothly.

 

 

Ricotta-Style Almond Cheese

1 1/3 C Almond Meal

2 T Lemon Juice

½ t Sea Salt

*¼-1/3 C Water 

1 T Tahini

 

Using a fork or a blender, mix together all ingredients, *holding back some water; adding only as needed for consistency.

Variation: add Pizza Seasoning for a zippy, full flavored spread.


Mylks

Almond Milk

1 ½ C Almonds

4 C water

2-4 Dates or 1 T Maple Syrup

1 t Vanilla

 

Add ingredients to the blender and blend smooth.  Note: Soak the almonds and dates overnight, if you do not have a high speed blender.  Pour through a nut milk bag into another container to strain (optional).

 

 

Cashew/Hazel Nut Milk

½ C Chasews

¼ C Hazelnuts

2-3 T Sesame Seeds

3 t Maple syrup

Dash of Salt

4 C Water

 

Add ingredients to the blender and blend smooth.  Note: Soak the nuts and seeds overnight, if you do not have a high speed blender.  Pour through a nut milk bag into another container to strain (optional).

 

 

Coconut Milk

1 can of Coconut Milk (Golden Star is a great product)

Dash of Salt

1 T Maple Syrup

1 t Vanilla (Optional)

Water to fill 1 Quart Container

 

Add all ingredients into a 1 quart container with a tight lid.  Shake vigorously to mix well.
